Chia Pudding Breakfast Bowl

Most mornings I don’t want to think about what I’m going to eat for breakfast so this is my easy, low-maintenance, go-to breakfast. It comes together really fast and satiates me until lunch. The fruit changes with the seasons so the flavors are ever-changing. Since I have reduced dairy in my diet, I have found that it works really well with plant based milk and vegan yogurt (cashew yogurt is my fave). The chia pudding lasts for up to a week in the fridge so it’s easy to keep on hand.


Ingredients 

4 tbsp chia seeds

1 cup milk (dairy or vegan)

Yogurt (dairy or vegan)

Seasonal fruit of your choice (I used pear, grapes & persimmon)

Granola 

Cinnamon


Instructions

Add chia seeds and milk to a jar

Put on the top and shake to combine

Let the chia seeds soak for 15 mins or overnight to plump

Add equal parts of chia pudding and yogurt to a bowl

Top with granola, your favorite seasonal fruit, and a sprinkle of cinnamon!
