BBQ Salmon Tacos

This recipe highlights the friendship between salmon and fruit, a juicy pairing. The sweetness of the mango and the brown sugar in the rub play well together, while the smokey salmon adds depth. A great weeknight meal, this dish is quick to assemble and is so delicious. If you can’t find ripe mangos, replace them with peaches or nectarines. The best part is that the leftovers are equally satisfying.

Salmon rub ingredients:

-2 lbs salmon

-2 tbsp brown sugar

-1 tsp salt

-2 tsp smoked paprika

-1 tsp garlic powder

-1 tsp chili powder

-1 tsp oregano

Salsa ingredients:

-¼ red onion, finely chopped

-2 mangos, diced

-½ bunch of cilantro, chopped

-½  Serrano pepper deveined and de-seeded

-sprinkle of sea salt

-1 lime, juiced

Black bean spread ingredients:

-1 can salted black beans, rinsed

 -½ tsp salt 

-2 tsp olive oil

-1 tbsp lime juice

-2 tbsp green salsa

-½-1 tsp hot sauce


Directions:

  1. Make black bean spread by adding 1 can of rinsed black beans, salt, olive oil, lime juice, green salsa and hot sauce to food processor and blend until smooth

  2. Make mango salsa by adding chopped onion, mangos, cilantro, salt, lime juice and serrano pepper into a bowl and mix

  3. Spread brown sugar rub onto salmon, covering all sides

  4. Heat grill to low and place salmon on grill in foil, cover and cook for 8-15 minutes (cook times vary depending on size and thickness of fish)

  5. Heat up tortillas and assemble tacos! Place a layer of bean spread onto the tortilla, add the salmon, top with mango salsa and a squeeze of lime

  6. Dig in and enjoy!
