My Favorite Breakfast Tacos

Serves 1

These tacos are so simple and one of my favorite breakfasts. I like to mix my eggs and seasoning in a jar instead of in a bowl with a fork- something about it just makes me feel like it's easier to clean up! I used small tortillas that were a mixture of corn and wheat, but use whatever you have and enjoy. The sauerkraut not only adds a fantastic tang but is a great source of probiotics as well. Recipe serves 1 but can easily be scaled up for a bigger group. They were a big hit when I cooked them for breakfast at my bachelorette party!

Ingredients 

1 tsp butter (I used DF)

2 eggs 

⅛ tsp salt

Sprinkle garlic powder

Pepper-to taste 

2 tbsp liquid (milk, creamer, half and half, DF milk or even water work!)

2 small tortillas  

¼ c sauerkraut 

¼ avocado

Hot sauce to taste (Pepper plant is the best!)


Instructions 

Whisk or shake together the eggs, salt, pepper, garlic powder and liquid of choice.

Heat your tortillas over an open flame, flipping until warmed and slightly charred on each side.  

Heat your butter in a pan over medium low heat, and scramble your eggs. 

Place the scrambled eggs in each tortilla, and top with sliced avocado, sauerkraut and hot sauce to taste. Enjoy!
