Sesame Peanut Noodles
This recipe may require three pots but it’s totally worth it! It is a full-flavored, complete meal that lasts for days in the fridge. Think noodles with vibrant veggies, crunchy peanuts, fresh herbs and deep umami seasoning; this dish is great for meal prepping and can be eaten hot or cold. Feel free to swap out the broccoli or bok choy with any veggies you have on hand.
Ingredients
¾ cup roasted salted peanuts, crushed or chopped
1 clove garlic
½ cup avocado oil
2 tbsp tamari
1 tablespoon toasted sesame oil
1 tsp red pepper flakes (more or less depending on your spice preference)
1 lb ground turkey or chicken
8 oz (half package) spaghetti
2 heads baby bok choy, chopped
1 bunch broccoli, cut into florets
½ bunch cilantro, chopped
1 bunch green onions, chopped
1-2 tbsp rice vinegar
½ tsp black pepper

Instructions
In a large pot, salt pasta water and bring to a boil
Combine peanuts, the garlic clove, and avocado oil to a small pot
Cook on low until the garlic clove starts to brown and peanuts are a shade darker, about 5 mins
Take off heat then stir in chili flakes, sesame oil, and tamari and allow to sizzle
In a large pan, heat 1 tbsp oil on medium-high heat and add turkey
Spread turkey in the pan to create more surface area and season with ½ tsp salt and ½ tsp black pepper
Sear turkey for 4 minutes, then break up into bite size pieces
Cook for 4 more minutes until fully cooked
In the large pot, add spaghetti and cook for 2 minutes shy of package instructions
Add bok choy and broccoli
Cook for 2 more minutes then drain
In the large pot, stir in drained pasta, turkey, peanut sauce, green onion, cilantro, ¼ tsp salt, and rice vinegar
Garnish with more cilantro, red pepper flakes, green onion, or peanuts, then serve!
